Crock Pot Brown Sugar Chicken

Tonight I made ANOTHER crock pot dinner!  It has really helped these last few days having dinner ready right when we get home from football practice - even though we are ALL already tired of eating dinner at 8:30 every night! 

Crock Pot Brown Sugar Chicken

Ingredients:
1 1/2 lbs boneless skinless chicken breast
1 cup brown sugar
2/3 cup white vinegar
1/4 cup lemon lime soda (I used 7-up)
3 cloves garlic, minced
1 green bell pepper, seeded and sliced (I used yellow, because it was what I had already)

Directions:
1.  Place chicken in crock pot.
2.  Mix all other ingredients in another bowl and pour over chicken.
3.  Cook on high for 3-4 hours, low for 6-8 hours.
4.  Serve over rice or noodles.


This made a really great sauce. Tasted to me like a sweet Asian style sauce.  The whole family really enjoyed it, and there was very little left over because everyone ate  A LOT!

I will make this again!


Crock Pot Beef Stroganoff

Morning y'all!!

Dinner last night was once again a hit!  (I really like when that happens!)

I got this recipe in an email from a really great friend that always has really great food ideas!!  :)  Thanks Danielle!


Beef Stroganoff

Ingredients:
2 lbs stew meat
1 cans Condensed Golden Mushroom Soup
1 onion, diced
4 tbsp Worcestershire Sauce
1/2 cup water
8 oz cream cheese (1 whole block)
garlic salt to taste and hot paprika to taste

**I used 3 cloves fresh minced garlic, just because I always use it and I also added a dollop of sour cream right before serving!

Directions:
1.  Mix all ingredients (except meat and cream cheese in bottom of crock pot).
2.  Once all mixed up, add meat and stir in.
3.  Cook on low for 8 hours (I did high for 5). 
4.  Cut cream cheese into cubes and stir into the meat mixture. (you might need to close the lid for 10 minutes to help it melt together. (this is where I also added the sour cream)
5.  Serve over egg noodles.

Cheesy Chicken Chili

It's been - - - - - - - - way too long!

I'm sorry for taking months to add a new recipe and I know I should be more consistent about this!!

Football season has started.  Ty is playing again this year and we have had 6 day a week practice for the last 2 weeks, and today starts week 3 like that.  Next week i think we go down to just 3 days a week of practice and a game on Saturday morning!

Cooking dinner in the Crock Pot/Slow Cooker (whatever you want to call it) is really one of the only ways we can eat at home right now because with practice from 6-8, its way to late when we get home to cook and I can't feet Ty before we leave because the heat makes him sick!  EWW!

I asked recipes on facebook, because I was getting bored with the ones I always make.  Then I remembered the one I made last week that was new, and AMAZING, and totally something I will be making again!  Everyone in the family loved it and Ty even asked for the leftovers for his lunch the next day!

Here is the recipe: (I found the base of this recipe online somewhere but I didn't have all the ingredients so I winged it)

Cheesy Chicken Chili
Ingredients
4 frozen chicken breasts (boneless skinless)
1 can corn (not drained)
1 can black beans (other beans will work - kidney, pinto) - rinsed and drained
1 can diced tomatoes or rotel
1/2 brick cream cheese
1/2 large brick velveta
1 packet Hidden Valley Ranch Dressing mix
2 cloves garlic, minced
salt and pepper to taste

Directions

Place all ingredients, except velveta into the crock pot.  Cook on low for 6-8 hours.  30 minutes before serving cube velveta and add to crock pot.  Stir in to melt and to break chicken into pieces.




*****We served this with rice for dinner, but ate it the next day in a tortilla!!  It was delicious!!

Grilled Cheeseburger Wraps

I recently had a Pampered Chef  party!!  We wanted to show off the Pampered Chef Grill Pan, and we made Grilled Cheeseburger Wraps!!  I added a few things, as usual and they were a huge hit and everyone loved them!  

I will definitely add them to my menu plan dinner rotation!!

Grilled Cheeseburger Wraps

Ingredients
1 lb ground beef
1 tablespoon Worcestershire sauce (I used a little more to taste)
1 tablespoon ketchup
1 teaspoon dried minced onion
pepper and salt to taste
Low-Carb Wraps (i used a whole wheat with rye flavor)
shredded cheddar cheese
sliced tomatoes
sliced pickles
yellow mustard


Directions

Brown ground beef in large skillet and drain. 
Add Worcestershire sauce, ketchup, dried onion, and salt and pepper to the beef and simmer for 5 minutes. 
Sprinkle shredded cheese down center of each tortilla. 
Add a few heaping tablespoons of the beef mixture on top of the cheese. 
Spread some mustard on top of the beef along with some slices of tomato. 
Roll up wrap burrito-style and place wraps on preheated grill pan (could also use a George Foreman or something similar).
Grill until grill marks show up on wrap outside.

So, grab a plate, eat and enjoy!!

Slow-Cooker Baked Potatoes

Easier than I ever thought!!  I HATE to use the oven for over an hour on a really high heat to bake potatoes for dinner!!  I always seem to forget to put them in on-time and we end up always waiting for the baked potatoes to be done long after everything else is ready!!

I saw a few places on Pinterest saying that they put their baked potatoes in the slow-cooker!! 

DUH - GENIUS IDEA!! 

I have 2 slow-cookers and for dinner tonight I wanted to make BBQ stuffed potatoes with left over brisket I had in the freezer!  So this morning one slow-cooker has my meat and one has my potatoes, and dinner will be done with ONLY TWO DISHES  TO WASH - can I get an AMEN to that!! 


Slow-Cooker Baked Potatoes
~Wash potatoes well, let dry and wrap individually with aluminum foil.
~Place potatoes in slow-cooker and cook on love for 8 hours!!

 P.S. Did I already say this was easier than ever!!!  - because, this is easier than ever!

Easy Cobbler and My Momma's Chicken

It's always a really good feeling when your neighbors come over and say - "Tonight, for dinner, I made TWO of your recipes and we LOVED them!  There wasn't anything left over!!"

It always makes me smile, and I am always excited that I helped another family cook really delicious food that they all enjoyed as much as my family does!!

The two things my wonderful neighbor cooked were: My Momma's Chicken and Super Easy Cobbler (only has 3 ingredients).

Momma's Chicken 
(This dish is called Momma's Chicken because my mom made this recipe up.  She was always good at doing things like that, and probably the best cook I personally know.  This was one of my families, and most friends, favorite meals growing up.)

Ingredients
1 pound boneless, skinless, chicken breast, cut in bite size cubes
1 squirt fat-free Italian dressing
shake of soy sauce
seasoning to taste (garlic powder, salt and pepper, etc.)
1 can cream of chicken (or cream of mushroom, whatever you have, or like)
Dollop of sour cream, or fat-free plain Greek yogurt
rice

Directions
1.  Brown chicken pieces in skillet with dressing and soy sauce, and seasoning.
2.  Once chicken is browned add can of soup and cook on low until chicken is cooked.
3.  Right before serving add dollop (or 2) of sour cream.
4.  Serve over rice.

Easy Cobbler

Ingredients
Frozen fruit of your choice (mixed berries, peaches, strawberries, cherries)
1 yellow or white cake mix
12 ounces sprite (or diet sprite for less calories)

Directions
1.  Preheat oven to 350.
2.  Spray 9X13 glass pan with non stick spray.
3.  Place frozen fruit on bottom of pan, cover pan with 1 layer of fruit.
4.  Pour dry cake mix (strait out of box) over fruit.
5.  Pour sprite over cake mix and fruit.
6.  Bake for 40-50 minutes.

English Muffin Personal Pizza

I love pizza! 

My kids love pizza! 

Pizza from a "delivery" is so pricey and we are trying not to eat "out" as often so we make personal pizzas at home! 

These are a much healthier, price conscious way to have pizza and the kids love to put on their own toppings!! They also taste so good, and I enjoy them much more than delivery!!

English Muffin Personal Pizza

Ingredients
100 calorie whole wheat English muffins (note: we use Thomas brand)
1 jar pizza sauce, or traditional flavor spaghetti sauce (note: we save the extra in the fridge for spaghetti sometime later that week)
Shredded mozzarella cheese
mini pepperonis
other pizza toppings - cut veggies, other meats, etc.

Directions
1.  Preheat oven to 400.
2.  Split English muffins in half to make pizza crusts.
3.  Spread about a teaspoon of sauce onto muffin half.
4.  Top with toppings, and cheese.
5.  Place on metal baking sheet, and bake for about 10 minutes, or until cheese is melted and bubbly! 

We make these for a fast an easy dinner on the week nights and also for lunch!!  I let the kids top their own for a fun activity!! 

Grab a plate, eat and enjoy!!
